Gamay Beaujolais Clone. Dark berries/stone fruit, smokey, spicy/forest, sour cherry hard candy, more tannic structure than the 2020 Pinot Noir Clone 7 and more age worthy. It’s a “bigger” wine.
Harvest: October 8. 2.85 ton, 23.1 brix, 7.5 g/l TA, 3.15 pH
Treatment: Destemmed, crushed, 8 day fermentation at 65-83 degrees. 100% malolactic fermentation.
Final stats: 6.7 g/l TA, 3.64 pH, 0.1% residual sugar, 12.7% alcohol. 183 cases produced.
