2019 Merlot
This deeply tinted Merlot offers a lot of promise, even in such a youthful state. Black and blue fruit character define this fine wine and very fine, soft tannins play nicely on the palate. Elegant.
3.12 tons of estate grown Merlot grapes were harvested by hand on October 9, 2019. The grapes had 20.87 brix natural sugar, 9.5 g/l TA and a 3.12 pH. These were destemmed, crushed, and inoculated with yeast. Fermentation lasted for 13 days at 62-71 degrees and a full malolactic fermentation was completed. The must was pressed and on January 9, 2020, the wine was transferred into new and used American and French oak barrels. The wine currently has 6.9 g/l TA, 3.55 pH, 12.7% alcohol and 0.4% residual sugar. Approximately 140 cases will be bottled.
