2019 Black Russian Red
This wine really never disappoints those who hold a fascination for dry, big, bold red wines. It offers more complexity, balance and elegance than does the Saperavi even in this youthful state. It will continue to age for another year in oak barrels, becoming more concentrated and deeper yet. Upon its release it will be labelled “Saperavi Reserve” rather than as “Black Russian Red.” This is another great vintage of a great wine and it will age, develop and evolve in the bottle for years upon years.
6.14 tons of estate grown Saperavi grapes were harvested by hand on October 18, 2019. The grapes had 21 brix natural sugar, 13.1 g/l TA and a 3.10 pH. These were destemmed, crushed, and inoculated with yeast. Fermentation lasted for 10 days at 68-72 degrees and a full malolactic fermentation was completed. The must was pressed and on January 16, 2020, the wine was transferred into new and six year old American oak barrels. The wine currently has 7.9 g/l TA, 3.47 pH, 12.5% alcohol and 0.4% residual sugar. Approximately 245 cases will be bottled.
